Green Split Peas With Yam

appliances

collander
bowl and cover

cutting board and knife

1 large pot
1 large spoon


ingredients (in order of appearance)


1 cup of dry split peas, cleaned in a collander, and soaked overnight in water in a covered bowl

1-2 tbsp olive oil

5 cloves of garlic, chopped
1 medium to large yellow onion, sliced and chopped
2-3 stalks of celery, chopped

1 16 oz can of diced tomatoes
4-5 cups of water
1 medium to large red garnet yam, sliced and chopped

seasoning, to taste unless otherwise indicated -

sea salt
freshly ground black pepper
basil, rosemary, and thyme

procedure

1.  sauté your onions, garlic, and celery in olive oil at the bottom of the pot on a low to low-medium heat unless softened, seasoning mildly.

2.  add your diced tomatoes, water, beans, chopped yam, and more seasoning.  Stir, raise heat, and bring to a boil.

3.  lower heat, and simmer for about 1-2 hours, covered, stirring thoroughly every now and then. (The longer you cook the soup, the more the peas dissolve and thicken.  So, it's a matter of taste and time available.)

Enjoy!  Serve with crusty bread, and topped with grated cheese or brewer's yeast, or garnished with fresh Italian parsley.

according to wiki, split pea soup was sold on the streets of athens 500-400 b.c.  split pea soup is mentioned in aristophenes' comedic play, the birds, a tale in which two athenians - euelpides and pisthetairos - set out to establish a new city in the clouds (the realm between gods and humans) where justice and pleasure will rule, and calling upon the birds to join them.
